Crispy Rice Flour Potato Snacks: A 5-Minute Teatime Delight

  • Ingredients:
  • ½ cup Rice flour (അരിപ്പൊടി)
  • 1 large Onion, finely chopped (വലിയ ഉള്ളി, ചെറുതായി അരിഞ്ഞത്)
  • 1 medium Potato, boiled and mashed (ഇടത്തരം ഉരുളക്കിഴങ്ങ്, വേവിച്ച് ഉടച്ചത്)
  • A few Curry leaves, finely chopped (കറിവേപ്പില, ചെറുതായി അരിഞ്ഞത്)
  • A small piece of Ginger, grated (ചെറിയ കഷണം ഇഞ്ചി, അരച്ചത്)
  • ¼ tsp Turmeric powder (മഞ്ഞൾപ്പൊടി)
  • 1 tsp Chilli flakes (adjust to taste)
  • ¼ tsp Garam masala
  • Salt to taste (ഉപ്പ്)
  • Water to make batter
  • Oil for deep frying

Start by preparing the vegetables. Finely chop the onion and curry leaves, and grate the ginger. Boil, peel, and mash the potato until smooth, ensuring there are no lumps. In a mixing bowl, combine the rice flour with the mashed potato, chopped onion, curry leaves, ginger, turmeric powder, chilli flakes, garam masala, and salt. Mix everything together with your hands, gently pressing the ingredients so the flavors meld. The potato will help bind the mixture, reducing the need for additional binders.

Gradually add water, a little at a time, to form a thick, smooth batter. The consistency should be thick enough to coat a spoon but still pourable—similar to a pancake batter. If the mixture feels too dry, add a splash more water; if it’s too runny, sprinkle in a little extra rice flour. Heat oil in a deep pan or kadai over medium heat. To test if the oil is ready, drop a small amount of batter—it should sizzle and rise to the surface without browning too quickly. Using a spoon, carefully drop small portions of the batter into the hot oil. Fry in batches, ensuring not to overcrowd the pan, until the snacks turn golden brown and crispy on all sides. This should take about 2-3 minutes per batch.

Drain the fried snacks on paper towels to remove excess oil and serve immediately for maximum crispiness. These rice flour potato bites are delicious on their own, but pair beautifully with a tangy tamarind chutney, spicy green chutney, or a simple tomato ketchup. A cup of hot masala chai or filter coffee completes this quintessential Indian teatime experience. For variation, try adding finely chopped spinach or grated carrots to the batter, or experiment with different spice blends like chaat masala or dried mango powder for a tangy twist. These crispy treats are also versatile enough to be enjoyed as a starter or party appetizer with a side of yogurt dip.
