Bitter Gourd Curry: A Perfect Balance of Tangy, Sweet, and Spicy Flavors

  • 1 large onion, finely chopped
  • 1 tomato, finely chopped
  • 1-inch ginger, grated
  • 3-4 garlic cloves, crushed
  • 2 green chilies, slit
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • ½ tsp cumin seeds
  • ½ tsp mustard seeds
  • A few curry leaves
  • 1 tbsp tamarind paste soaked in ¼ cup warm water
  • 1 tbsp jaggery or brown sugar
  • Salt to taste
  • 2 tbsp cooking oil

The secret to a great bitter gourd curry lies in proper preparation. Start by selecting firm, fresh bitter gourds with bright green skin and no soft spots. Slice them thinly and rub generously with salt and a splash of lemon juice. Let them sit for 15 minutes to draw out the bitter juices, then rinse thoroughly under running water. This simple step dramatically reduces the bitterness without compromising the vegetable’s nutritional value. Pat the slices dry before cooking to ensure they fry up crisp and absorb the flavorful masala.

Heat oil in a pan or kadai over medium heat. Add mustard seeds and cumin seeds, letting them splutter, then add curry leaves, ginger, garlic, and green chilies. Sauté until aromatic, then add the chopped onions and cook until golden brown. Add the tomatoes and cook until soft and mushy.
