Made with simple ingredients like maida (all-purpose flour) for a tender bite, they are easy to whip up, customizable, and perfect for enjoying with a cup of tea.

- 3 eggs
- ¼ cup maida
- ¼ cup milk
- ½ cup finely chopped mixed vegetables (onion, bell pepper, tomato, spinach)
- 1 green chili, finely chopped (optional)
- 2 tbsp fresh coriander, chopped
- ½ tsp salt (or to taste)
- ¼ tsp black pepper
- ¼ tsp turmeric powder (optional, for color)
- ½ tsp baking powder (for fluffiness)
- 1 tbsp oil or butter
Prepare the Veggies and Batter
Start by finely chopping your choice of vegetables—onion, bell pepper, tomato, and spinach work well. In a large mixing bowl, crack in the 3 eggs and whisk well until frothy. Add the milk, maida, baking powder, salt, pepper, and turmeric. Whisk vigorously until you have a smooth, lump-free batter with a pouring consistency, similar to pancake batter.
